Libyan spaghetti is a delicious and quick addition to your Iftar table.
In a pot, Begin by frying a medium chopped onion in ghee until it just begins to brown. Brown 3 or 4 pieces of chicken with skin. Add 3 tbsp. Tomato paste. Add hot sauce to taste. Add 1 tsp. Cumin, 1 tsp. Hot paprika, 1/2 tsp. Fenugreek seeds, salt and pepper to taste. Cook about 10 minutes. Add 4/5 cups of chicken stock to the pot and bring to a boil cook until chicken is done (approximately 30 mins.) and 1 cup spaghetti or macaroni and cook until pasta is cooked. Sprinkle with chopped parsley and serve.
