Ramadan Recipe #3: Kofta bil Seeniya

1 Kg. Ground Lamb
1/2 cup semolina
1 tsp. Allspice
1 tsp. Cinnamon
Bunch of parsley
Bunch of mint
Salt and Pepper to taste
1 egg

Mix all ingredients in a large bowl, then press into a pan greased with olive oil.

3 potatoes thinly sliced
1 fresh tomato thinly sliced
1 green pepper thinly sliced

Place on top of the Kofta

In a pan on the stove add 2 cups of water, 1 cube of chicken stock Maggi, 2 tbsps tomato paste. Pour mixture over the Kofta and vegetables.

Cover the pan with aluminum foil and the pan in the oven. Bake for one to one and a half hours at 400 degrees until potatoes are soft.
