Recipe: Shakshuka: The Best Breakfast Ever!

 

Shakshuka is primarily a North African dish but it has become a favorite throughout the Arab World.  Shakshuka is top of the list of my favorite egg dishes. While there are many variations of shakshuka, a traditional shakshuka recipe is basically eggs poached in a spiced tomato and green pepper stew with onions and garlic. Quick, Easy, Healthy and Delicious: try it once, and it will become your new favorite!

Ingredients:

olive oil for frying

6 large eggs

1 large onion chopped

1 cup chopped peppers (green, red and yellow)

2 cloves garlic

1 chopped fresh tomato

1 can chopped tomatoes

1 tsp. Cumin

1 tsp. Paprika

1/2 tsp. Turmeric

1/2 tsp. Black pepper

1/2 tsp Red Pepper (If you like it hot!) You can also add some Tabasco sauce.

Salt to taste

 

Directions:

Begin by chopping the vegetables.

Heat the olive oil in a frying pan

Fry the onion until browned

Add garlic

Add peppers, fry until tender

Add tomatoes and spices, simmer until well cooked

Make pockets in the sauce and add the eggs.

Cover and cook until done.

Transfer to serving dish and sprinkle with fresh chopped coriander.

Serve with Arabic flat bread and delight your family and friends!
